Gault&Millau toques are not awarded for a particular style of cooking. It doesn't matter whether your cooking style revolves around classic, modern, regional, vegetarian or exotic dishes. The grading system is based on a school grading system with a scale of points ranging from 0 to 20. From 11 points upwards, toques are awarded, whereby a restaurant can receive a maximum of five toques.
